In Sonoma, Healdsburg’s historic plaza recently welcomed The Matheson and Roof 106. The trilevel building features two restaurants, each with its own vibrant personality. Inside The Matheson, guests will find a vaulted ceiling constructed with beams stained with natural hues and in red, similar to Bordeaux wine barrels. Sourcing from local growers, ranchers, fishermen and artisans, the culinary team created five- and eight-course tasting menus. The Sushi Kitchen features a la carte sashimi, hand rolls and specialty dishes, and the bar seats up to 12 guests. Roof 106, located on the third floor, offers seasonal dishes from the wood-burning oven, and the wheat flour for the dough is sourced from a biodynamic, organic farm and vineyard owned by Lou Preston, a renowned Dry Creek Valley winemaker, farmer and baker.

After an extensive three-year renovation, Keswick Hall reopened near Charlottesville, Va., and the wait was worth it: The 80-suite resort, which dates back to 1912, is stunning. The culinary team sources locally and from Oakdale Farm, which is run by the resort and produces vegetables, edible flowers and, starting this spring, its own honey. The kitchen’s standout courses include spice-crusted Faroe Island salmon, roasted Maine lobster and prime tenderloin. Every dish from Vongerichten’s team is a steady balance of beauty, taste and restraint, explaining why it’s already an instant classic.
